FESTIVITIES FROM HERE AND ABROAD
DECEMBER 27 TO 31

Cavistes is home to many individuals who work far from their homeland and will spend the holidays away from family and friends. This year, we decided to give them the reins of a menu that, for a few plates, will remind them of the dishes they might have shared with family. They are offering it to you from December 27 to 31.

APERITIF
$5
Freshly returned from France, our pantry chef Guillaume tells us that in his family, Christmas is often kept simple with oysters and foie gras.

Foie gras canapé, fig compote, and port on honey rosemary focaccia

CHOICE OF APPETIZERS
$15
Rabia, who has been on grill duty at Cavistes since May 2023, shares a dish reminiscent of her native Algeria.

Brick pastry filled with tuna, potatoes, egg yolk, and béarnaise sauce

Jessy, who joined us from France this autumn, is a quiet force among our team. He suggests a dish his mother serves during the holiday season.

Roasted pepper panna cotta, chorizo crumble, and mustard greens salad

CHOICE OF MAIN COURSES
$37
Renée, our evening pantry chef since spring, offers an Italian dish inspired by an aunt who prepares it during the holidays.

Roman-style roasted leg of lamb, parmesan and breadcrumb-stuffed artichoke, white wine sauce, and garlic sautéed vegetables

A pillar of our hot line for two years, Sidi Mohammed presents a classic Algerian dish.

Rabbit tagine with lemon, chickpeas, and olives, brick vermicelli, and Nantes carrots

Ruben, our tasting workshop chef, brings creativity and dedication to our team. Here is his interpretation of bacalhau da consoada de Natal, a rustic family dish from Portugal.

Grilled cod, crushed roasted potatoes, carrots, broccoli, and aioli

CHOICE OF DESSERTS
Josh, our executive chef, proposes a variation of a holiday classic from his family, which has also become a tradition for Cavistes staff!

Layered chocolate biscuit, salted caramel, and chocolate glaze / $8

A family recipe from Ruben, who couldn’t imagine Christmas without...

Filhoses (x4) / $8

One of the owner’s sweet weaknesses, here is a Mexican twist on a classic bistro dessert.
